Pepsin Mass Spec (MS) Grade is the major human gastric proteases, which contributes to proteolysis of food proteins in vertebrate stomach1.
This protease cleaves at the C-terminus of Phe, Leu, Tyr, Trp.
It can be used alone or in combination with other proteases for protein analysis by mass spectrometry and other applications.
Pepsin activity is optimal at pH 1.0–3.0. Its applications include peptide mapping, protein identification and characterization of post-translational modifications.
